Morello Austera is an agricultural company in Cantiano, in the Marche region of Italy, that has produced Amarena di Cantiano sour cherries and fruit preserves since 2005. It supplies gelaterie and pastry kitchens in Italy and abroad that process and sell the fruit. The range includes classic amarena, air-dried and technical grades, organic and semi-candied styles, plus wild cherries, oranges, figs and berries. The Amarena di Cantiano is listed in the Slow Food Ark of Taste, and the local Visciola is a recognised traditional product. Its focus on locally grown Cantiano fruit gives gelato makers a traceable amarena of documented origin.
